We are now at the end of week 2 of the “no eating out” challenge for the month of August. It has been going really well for us. We’ve been sticking to our plan, for the most part. We have had to make a few adjustments to our menu plan here and there, but we have stuck with it and had no fast food or take out this month! We’ve made it almost to the middle of the month, just a few more days! Actually, it hasn’t really been that extremely hard for us because Jason and I have been trying to eat healthier and it just makes more sense to not eat as much fast food.
Here is our menu plan for this coming week:
Sunday: Deli Sandwiches, French Fries, Fruit
Monday: Lasagna & Garlic Bread
Tuesday: Chicken Legs, Rice, Veggies
Wednesday: Ham & Potato Casserole, Green Beans, Cornbread
Thursday: Meatloaf, Mac & Cheese, Glazed Carrots
Saturday: Sloppy Joe & French Fries

I just finished reading my second book for Summer Reading. Made to Crave by Lysa Terkeurst is such an amazing book!
Our Homeschool Room has evolved over the years so much. I know I talked in a previous post about how we started homeschooling and I mentioned that we started in a corner of the living room. We called it our “School Corner” when Popstar and Flash were just doing fun Preschool activities.
It seems like over the years, it slowly took over our entire living room. It was manageable, but getting hard to deal with. We were always rearranging and trying to figure out the most efficient way to use our small space. That was just a way of life in our old house and we were content with life that way for many years.
But as the kids started growing bigger and bigger and bigger….we were really busting at the seams! God blessed us so much with our new house! Making do with an extremely small house for almost 10 years made us really appreciate our new house. When we started looking at houses, we knew that we needed some sort of school space. Each house we considered was laid our differently.
The first time we walked into the house we ended up buying, we both knew that it was “The One”. There is an extra living space off of the living room that is perfect for our school room. It even has built in cabinet/storage spaces and huge windows that brings in tons of sunshine. We are incredibly blessed and thankful for this new house, especially because of the school room. I never thought I would have a school room but I’m also very thankful for the years that I had to do without because that made me appreciate it so much more. I turned 40 years old this last Wednesday. I used to look at people who were that age and laugh, thinking it would be so long before I was even close to that age. And now here I am.
Well, I can honestly say it feels a lot different than I used to think it would. I think that each and every thing we go through, whether it’s wonderful and amazing or it’s traumatic and devastating, each situation changes us in some way and molds us and makes us into who we are. We have a choice to make every single day whether we’re going to let trials and problems change us for the good or bad.
I think back on all the big, life-changing events in my life. My high school graduation, meeting my (future) husband for the first time, my wedding day, finding out I was pregnant for the first time, becoming a mother, saying goodbye to my beloved grandparents. Each and every one of those times have been filled with many different emotions and I have walked away from each situation a different person.
I’m not depressed to be 40, I know a lot of people make fun of turning 40 and how we’re getting old. I have decided that my 40’s are going to be my best decade yet. I’ve been through a lot and grown and I know so much more now than I did when I was 20 and now is my chance to enjoy life to the fullest. I have a wonderful, amazing husband and 4 beautiful children. I am truly blessed and have so much to be thankful for.

I always enjoy hearing other homeschool families stories of how they got started homeschooling, so I thought I’d share our story. I honestly never thought I would homeschool. My hubby and I had always been the type to take things as they come and not necessarily plan ahead. When my sister got married, she and her new husband had already made plans on how they would go about raising their children and that included homeschooling. She mentioned to me that I should consider it for our children. At the time, I only had my oldest and she was about a year old. I didn’t give it much thought for a long time until one day I was watching an episode of Oprah.
I want to wish a Happy Mother’s Day to all the amazing Moms out there!! I had a really nice Mother’s Day, my hubby is so sweet he made me breakfast in bed! I got to spend time with my mother and with my babies and that’s what the day is really all about.
My Mom is an incredible woman and I can’t imagine my life without her. My hubby’s mother died when he was only 10 years old and I just cannot even fathom how hard that was for a little kid and even now to go through life without his mom. Moms are just our safe place and the encouragers of our souls, our biggest fans and supporters and dear friends. God really knew what He was doing when He created the Mother/Child relationship.
I am also thankful for my four beautiful blessings that I get to call my children. Each one of my children are such a gift and an extension of myself. God has taken me on a journey with these little guys ever since my first one came along and I wouldn’t change a single minute of it. We have good days and bad days, but at the end of the day I am so thankful for the goodnight hugs and kisses. My little guys are what motivates me to be a better person and to keep going when I feel like giving up. God gave them to me and He gives me the strength to get through each day with them as I need it. He is so faithful.
So, GOD BLESS MOTHERS!!!!
One great thing I have started doing in the last year is freezer meals. It is so nice to have a freezer full of meals that are ready to go in the crock pot. It not only helps save you time but also money because you don’t end up buying fast food on those days when you just don’t have time to cook. It has been a life saver for our family! My hubby and I put together some at the end of November so that we’d have them to get us through the holidays and it was so nice. It really made the holidays a lot more enjoyable knowing that I didn’t have to spend a lot of time cooking dinner.
A few of my friends and I are convinced that the third child that comes along in a family is there to really test us to see what we’re made of. We all have very strong-willed third kids. My youngest boy, Hulk who is now 6 1/2, has always pushed me to the limit and really keeps me hopping all day everyday.
Over the years I have figured out that one of the most important things I can do to make sure we have a good day, is to make sure he has a really good breakfast. If he does, then our day goes along much easier.
