Who doesn’t love banana bread? I know I sure do, it smells so good coming out of the oven! I love having it warm with butter or even for a snack with peanut butter on it. Today I thought I would share with you my favorite recipe, as I know there are so many different ways to make it.

 

 

First of all, let me say one thing about bananas: when I have bananas that are over ripe and I don’t have time to use them before they will go bad, I peel them and put them in a freezer ziplock bag and put them in the freezer. Then when I want to make banana bread or muffins, I pull out how many I need and thaw them and they are great for baking! So don’t ever throw away over ripe bananas again!

On to the recipe….

Step #1  Gather Ingredients:

  1. 3 large bananas, mashed
  2. 2 eggs
  3. 1/2 tsp vanilla
  4. 1/4 cup oil or melted butter
  5. 1 cup flour
  6. 3/4 cup wheat flour
  7. 1 tsp salt
  8. 1 tsp cinnamon
  9. 1 tsp baking soda
  10. 3/4 cup brown sugar

 

 

Step #2  Preheat oven to 350°F.

Step #3  In a small bowl, combine wet ingredients (1st 4 ingredients). In another larger bowl combine all dry ingredients (last 6 ingredients). Add wet mixture into dry mixture and blend well. Pour into one greased bread pan for a large loaf, or two greased bread pans for two smaller loaves.

 

 

Step #4  Bake the one larger loaf for 1 hour, two smaller loaves for about 50 minutes. You will know it’s done when a toothpick comes out of the center clean.
