I have a new recipe for you today! I first found this recipe in one of my favorite cookbooks years ago and have changed it over the years to adapt it to the way our family likes it. Tuna Casserole is one of those go-to recipes of mine when the budget is getting low. Tuna and pasta are very inexpensive! This recipe is so easy and if you love cheese, you really should give it a try!

Here is how I make Tuna Casserole:

Step #1  Gather Ingredients:

  1. Egg Noodles, about 1/3 of a bag
  2. 1 can evaporated milk
  3. 2 cups shredded cheddar cheese
  4. 1/4 tsp pepper
  5. 2 (7oz) cans water-packed tuna, drained well
  6. Extra cheese for topping

Step #2  Cook noodles in boiling water. Cook uncovered until tender. Drain and rinse noodles in cold water to stop the cooking.

Step #3  Combine milk, cheese and pepper in a microwave safe dish. Cook for 2-3 minutes in microwave until cheese is melted, stirring every minute or so. (You can also do this on the stovetop.)

Step #4  Spread noodles and tuna in a greased baking dish (1.5qt).

Step #5  Pour cheese sauce over noodles & tuna.

Step #6   Sprinkle with desired amount of shredded cheddar cheese (at our house, the more the better!).

Step #7   Bake at 350°F for about 30 minutes. I usually serve with a vegetable and some corn muffins.
