Chicken Pot Pie Recipe

Hi everyone! I have a new recipe for you today: Chicken Pot Pie. I started making the recipe of this from my Bisquick Cookbook years ago. I must confess, Bisquick saved us our first few years of marriage. We had little money and I was still learning a lot about cooking, so we depended on Bisquick and frozen dinners a lot in those days!

Over the years I have changed the recipe here and there to fit our style and liking. We always have it with rice and it’s usually a big hit with (almost) everyone in the family.

 

 

 

Here’s how I make it:

Step #1   Recruit a super cute assistant!

 

 

Step #2   Have super cute assistant help gather ingredients:

  1. 1 can chicken breast, drained of juices
  2. 1 can mixed vegetables, drained (you can also used frozen)
  3. 3 cans cream of chicken
  4. 2 cups baking mix
  5. 1 cup milk
  6. 2 eggs

 

 

Step #3   Preheat oven to 400°F. In a bowl, mix together chicken, vegetables and cream of chicken.

 

 

Step #4   Spread mixture evenly in 9×13 casserole dish.

 

 

Step #5   In a bowl mix together the eggs, baking mix and milk. Stir until blended well and then spread over the chicken mixture in the pan evenly.

 

 

 

Step #6  Bake uncovered for 30 minutes, until crust is golden brown.
