Energy Bites Recipe

I found this recipe several years ago at Gimme Some Oven. The whole family has loved this recipe and so I thought I’d share it with you! They are Energy Bites and they are very tasty as well as filling and healthy. I’ve changed a few things from the original recipe, just based on items I had on hand at the time. I have made these for my kids to have for snacks or for a substitute when they get tired of sandwiches for lunch. It has really been a big hit at our house and they are very easy to make!

Here is how to make them:

Step #1   Gather Ingredients:

  1. 1 cup dry oatmeal (any kind works great)
  2. 1 cup coconut flakes
  3. 1/2 cups chocolate chips
  4. 1/2 cup nut butter (I use peanut butter, but any kind will work)
  5. 1/2 cup wheat germ or ground flaxseed
  6. 1/2 cup honey
  7. 1 tsp vanilla

Step #2   Mix all the ingredients together until thoroughly blended. Refrigerate for a half hour to chill.

Step #3   Recruit a super cute assistant to help you roll them into balls or whatever shape you desire.

Step #4   Store them in an airtight container and keep them in the refrigerator for up to one week.
