Amy’s Amazing Meatloaf

Hi everyone! I have a new recipe for you today. I have made meatloaf so many times over the years, it is one of hubby’s favorites! And so in making it so many times, I have come up with my own recipe. We had it one night last week and so I thought I’d share it with you!

So here you go, how to make Amy’s Amazing Meatloaf!

 

 

Step #1 Gather Ingredients and Preheat oven to 375 degrees F.

  1. 2 pounds ground beef or turkey (I normally use a pound of each)
  2. 1 egg
  3. 1 onion, chopped
  4. 2 tsp Worcestershire sauce
  5. 3/4 cup oats
  6. 3/4 cup milk
  7. 1 Tbsp Lawry’s Seasoned Salt

Step #2  Mix ingredients together. I like to put them in my Kitchen Aid mixer and let it do the work!

Step #3   Shape into small mini-meatloaf patties and place in baking dish. Leave a few inches in between each one. I used to always make it in one big loaf, but when I discovered this way I haven’t turned back! It’s great because they cook a lot faster and more evenly than the huge loaf does.

Step #4   Mix the ingredients for the topping. About 1 cup of ketchup and about 1/4 cup of brown sugar. Spread a spoonful over each patty. I leave a few plain for some of my kids who don’t like the topping.

Step #5  Bake at 375 degrees F for 45 minutes to an hour, until done all the way through.

Step #6  Enjoy! We like to have it with some kind of potato, either baked potatoes, mashed potatoes or sweet potatoes and usually a veggie like peas.
