Strawberry Banana Icebox Cake

The last few weeks, Jason and I have started trying to find a new dessert to try on Sunday evenings. We usually don’t have dessert during the week, so we thought it would be a fun way to end the weekend with a new treat for everyone to try out. Today we actually came up with our own recipe. It’s very simple to make and this time of year, when it is strawberry season it is especially yummy! We call it Strawberry Banana Icebox Cake.

Here is how we made it:

Step #1 Gather Ingredients:

  1. Cool Whip, 3 8oz tubs or 1 1/2 16oz tubs
  2. 1 8oz package cream cheese, softened
  3. 1 small box vanilla pudding mix
  4. Approximately 30 crushed graham crackers
  5. 2 large bananas, sliced
  6. 1 pound strawberries, sliced

Step #2 Spread half of the crushed graham crackers in a 10×13 casserole dish or cake pan.

Step #3 Mix the cool whip, cream cheese and pudding mix together with mixer for a few minutes, until well blended.

Step #4 Spread half of mixture on top of graham crackers.

Step #5 Scatter half of strawberries and bananas on top of that.

Step #6 Repeat a second layer, using the rest of the ingredients.

Step #7 Refrigerate until chilled and ready to serve.
